Clare Smyth MBE has confirmed that Core by Clare Smyth will open an international site in New York this autumn, making it the first overseas outpost of the three-Michelin-starred Notting Hill restaurant she founded in 2017. The new restaurant will occupy a space in the West Village and is expected to open in October.
Smyth, who was named The World's Best Female Chef by the World's 50 Best Restaurants organisation in 2018 and holds three Michelin stars at the London original, described the New York project as something she has been considering since shortly after Core's initial critical success but delayed until she felt confident the conditions were right.
"Core is nine years old this year. We know who we are," Smyth said. "New York has always been on the list. The timing is right, the team is ready, and we've found a space that we can do something serious with."
The West Village Site
The New York restaurant will be located in a converted ground-floor space in the West Village, a neighbourhood that has become one of the city's most concentrated areas for high-end independent restaurants. The site is understood to have been under negotiation for the majority of 2025 and has been fitted out to Core's specification by the design team responsible for the London restaurant.
The New York dining room will seat approximately 45 covers — smaller than the London original's 60-cover layout — reflecting what Smyth describes as a preference for intimacy over scale. A private dining room will accommodate up to 12 guests.
The menu philosophy will mirror Core London's approach: British produce and culinary heritage as a starting point, expressed through contemporary technique. In New York, that will translate to a menu drawing from East Coast and Great Plains producers, with British imports for certain central ingredients. A tasting menu format is expected, alongside an à la carte option at the bar.
The Team
Smyth has confirmed that two senior members of Core London's kitchen team will relocate to New York to establish the opening team, bringing the restaurant's culinary standards and service philosophy directly from the London operation. Further senior appointments for the New York site will be announced ahead of opening.
The London restaurant will continue to operate without interruption under the core management team that has been in place throughout Core's run.
Core's Track Record
Core by Clare Smyth has held three Michelin stars since 2021 and has appeared consistently in the upper reaches of the UK's restaurant rankings since opening. Its approach — centred on British ingredients treated with the precision Smyth developed through 13 years working under Gordon Ramsay, including as chef patron of Restaurant Gordon Ramsay — has been recognised as a defining expression of contemporary British fine dining.
The New York opening will make Smyth one of a small number of UK chefs to operate a Michelin-calibre restaurant in the United States. Reservations for the autumn opening are expected to become available in the summer.
