CompliChef has launched Alice — an artificial intelligence assistant built directly into its KitchenPortal and StaffPortal platforms that addresses two of the most time-consuming compliance burdens facing UK food businesses: food safety documentation and rota management.

The launch represents a significant step forward in how AI is being applied to the operational realities of running a kitchen, and — characteristically for CompliChef — it does not feel like technology for technology's sake. Alice is practical, specific and built around the actual problems operators face rather than the theoretical ones that tend to populate product marketing decks.

Alice in the KitchenPortal: Food Safety Documentation in 15 Minutes

The first version of Alice sits inside CompliChef's KitchenPortal and does something that will feel immediately meaningful to anyone who has ever opened a blank Safer Food Better Business pack and wondered where to begin.

Alice conducts a short conversational interview — approximately 12 questions, in plain English, taking no longer than 10 to 15 minutes — about how the business operates. What do you cook? How do you chill? How do you handle deliveries? What's your approach to cross-contamination? The questions are straightforward. No prior food safety knowledge is required to answer them.

From those answers, Alice generates all 13 sections of a full CCDFSM — the Compliance, Cleaning, Cooking, Chilling and Cross-contamination Food Safety Management documentation that forms the core of the Safer Food Better Business framework used by the Food Standards Agency as the baseline expectation for food hygiene management at small and medium catering operations.

The output is professional, EHO-ready text customised to the specific business type and operations described. It can be reviewed and edited before being applied. And it costs from £25 as a one-time unlock through the CompliChef platform.

To understand why this matters, consider the alternative. Completing an SFBB pack from scratch — writing the diary sections, customising the safe method sheets, working through the management sections — typically takes a manager several hours and frequently requires outside help from a food safety consultant. For a small independent operator, that consultant time routinely costs £300 to £500. For a new business navigating their first EHO registration, the documentation requirement alone can feel like an insurmountable administrative wall.

Alice takes it down to a quarter of an hour.

Alice in the StaffPortal: Real-Time Rota Intelligence

The second version of Alice operates inside CompliChef's StaffPortal rota management system and functions as an always-available scheduling intelligence layer for managers and owners.

Where most rota tools show you what has been scheduled, Alice tells you what the rota means — and flags where it is about to cause a problem.

Alice monitors the live rota against minimum staffing requirements, identifying understaffed shifts before they become service problems. It tracks each employee's weekly hours against the 48-hour Working Time Regulations limit, flagging staff who are approaching the threshold and identifying who is available to cover gaps. It monitors contracted hours against actual rostered hours to help managers distribute shifts equitably — a recurring source of tension in any team where some employees are consistently over or underworked relative to their contracts.

Managers interact with Alice in plain English. Ask "who can cover Tuesday dinner?" and Alice checks availability, hours already assigned that week, and WTR compliance before suggesting a name. The platform demonstrates Alice identifying that Sarah has only 28 hours assigned for the week and is both available and within her hours limit — the kind of answer that currently requires a manager to cross-reference three separate documents.

Alice in the StaffPortal is available as an optional add-on at £19 per month on any StaffPortal subscription tier.

Why This Matters

The hospitality industry has been promised AI tools that would transform operations for several years. Most of what has arrived has been either too generic to be useful — large language models bolted onto customer-facing chatbots — or too expensive and complex to be practical for the independent operators who make up the majority of the UK food sector.

Alice is neither of those things. It is narrow, specific and priced accessibly. It solves defined problems that every food business in the country has. And it sits inside a platform — CompliChef — that is already built around the compliance and operational realities of UK food service rather than imported from another industry.

The food safety documentation tool in particular has the potential to meaningfully reduce the administrative burden of compliance for the tens of thousands of small operators who currently either struggle through the paperwork themselves, pay a consultant to do it, or — more often than either — let it slide and hope the EHO visit doesn't come.

Alice is available now. The KitchenPortal documentation tool is at complichef.co.uk/kitchenportal. The StaffPortal rota assistant is at complichef.co.uk/staffportal.
