Hawksmoor has signed for a site on George Street in Edinburgh, confirming the premium steak and cocktail group's first restaurant in Scotland. The Edinburgh opening — the group's eleventh globally, adding to its London sites, Manchester, Edinburgh, Dublin and New York — is targeted for late 2026.

Co-founders Will Beckett and Huw Gott confirmed the signing in a statement that acknowledged Edinburgh as a city the group had been actively targeting for some time. "Edinburgh has everything we look for," Beckett said. "A genuinely food-literate audience, a hospitality culture that takes quality seriously, and a building that we can do something exceptional with. George Street gives us all three."

The George Street Site

George Street — Edinburgh's primary luxury retail and hospitality corridor, running parallel to Princes Street through the New Town — is home to a concentration of premium bar and restaurant operators that includes existing Hawksmoor comparators in the premium dining category. The specific unit is understood to occupy a ground and basement level in one of the Georgian townhouses that define the street's architectural character, with the basement configuration well-suited to the theatrical, candlelit atmosphere that has become a Hawksmoor signature.

The site will seat approximately 110 covers across the main dining room and bar, consistent with the scale of Hawksmoor's UK provincial openings.

The Hawksmoor Format

Hawksmoor has maintained a consistent identity across its expansion that is unusual in a group of its size: aged native breed beef sourced from long-term farm partners, a cocktail programme that has been independently celebrated, and a service culture that prioritises warmth over formality. The combination has produced a brand that functions simultaneously as a special-occasion destination and a regular haunt for guests who can afford to make it one.

The Edinburgh menu will follow the estate-wide structure — the Porterhouse, D-Rump and Chateaubriand from the beef programme, the shellfish and fish secondary menu, the Sunday roast that has become as closely associated with the brand as the weekday steak — with sourcing adapted to incorporate Scottish producers where quality and provenance meet the group's standards.

Hawksmoor's track record in regional UK openings — Manchester, Edinburgh and Dublin have all performed strongly — suggests the Edinburgh site enters a market where the brand has genuine recognition and the pricing is well-positioned relative to local competition.

Reservations are expected to open approximately six weeks before the launch date. Further details will be confirmed by the group later in the year.
