Award-winning chef Marcus Henley is set to open his second restaurant this spring, bringing his acclaimed tasting menu concept to Liverpool's thriving Baltic Triangle.
Henley at the Baltic will occupy a 3,000 sq ft converted Victorian warehouse on Stanhope Street, seating 42 covers across two floors. The restaurant is expected to open in May, with reservations opening on 1 April.
The Menu
The 10-course tasting menu will draw heavily on North West produce, with Henley working directly with farms across Lancashire, Cheshire and the Lake District. "The North has incredible ingredients that rarely get the platform they deserve," Henley told The Mise. "We want to change that."
Signature dishes from Henley's London restaurant — including his roasted Cumbrian lamb with wild garlic and coal oil — will feature alongside entirely new creations developed specifically for the Liverpool site.
A shorter four-course lunch menu priced at £65 will run Tuesday to Saturday, with the full tasting menu available from Thursday to Saturday evenings at £145 per person.
The Space
The building, formerly a tea warehouse, has been sensitively restored by Liverpool-based architects Foster & Drummond. The ground floor houses the main dining room and open kitchen, while the first floor will operate as a private dining space for up to 20 guests.
Interior design by Studio Elms leans into the building's industrial heritage — exposed brick, steel I-beams and original timber floors sit alongside bespoke ceramics from Stoke-on-Trent potter Julia Marsh.
The Team
Henley has appointed Sophie Reeves, previously head sommelier at The Greenhouse, Mayfair, as restaurant manager and lead sommelier. The wine list will focus on small producers from Burgundy, the Loire Valley and emerging English vineyards.
Head of pastry will be Tom Barker, who trained under Henley at his London site before a stage at Noma in Copenhagen.
A Vote of Confidence in Liverpool
The opening reflects growing confidence in Liverpool as a serious food destination. The city has seen a wave of quality independent openings over the past three years, helped in part by lower rents compared to London and Manchester.
"Liverpool has an energy right now that reminds me of London a decade ago," Henley said. "The diners are curious, they want to be surprised, and the hospitality talent is exceptional."
