Padella has confirmed a third London site at Bishopsgate in the City, adding a location targeting the corporate lunchtime and after-work market that its existing Borough Market and Shoreditch restaurants — both neighbourhood-oriented in their positioning — have not been designed to serve.

The Bishopsgate unit will seat approximately 60 covers in a format consistent with the other two sites: a counter-heavy layout, an open kitchen, and the focused fresh pasta menu that has made Padella one of the most consistently praised casual dining restaurants in London since the Borough Market original opened in 2016.

Co-founder Tim Siadatan confirmed the opening in comments made at a food industry event in London this week, describing the City location as a long-considered move to bring the Padella offer to an area of London where the lunchtime dining population is large and underserved by the kind of quality-led, accessible independent that Padella represents.

"The City has millions of people eating lunch in it every working day," Siadatan said. "A lot of them are eating poorly and expensively. We think there's a significant gap for what we do."

Padella's Approach

Padella has maintained a model that prioritises simplicity and quality over complexity and scale since its founding. The menu covers a small number of fresh pasta dishes — the pici cacio e pepe and the pappardelle with eight-hour Dexter beef shin ragù are the dishes that have generated the restaurant's queues and its reputation — alongside a short selection of antipasti and desserts. Prices have remained modest relative to the quality of the product.

The Shoreditch site, which opened in 2022 on Old Street, maintained the Borough Market queuing culture at launch before the introduction of a reservations system for part of the room — a change that the group has carried into its operating model for future sites. The Bishopsgate opening is expected to operate a hybrid model from the outset: walk-in seating available at the counter, reservations for tables.

The City Lunch Market

The City of London's lunchtime restaurant market is characterised by high volume demand concentrated into a narrow service window, a price-sensitive but quality-aware corporate diner, and an underrepresentation of the independent operators that define London's best casual dining. The area is well-served at the premium end — Hawksmoor, City Social, and several high-end Japanese restaurants in the Bishopsgate corridor — but thin on the quality mid-market alternatives that the neighbourhoods of Bermondsey, Shoreditch and Soho have developed over the past decade.

Padella's entry into the City is likely to be watched closely by other casual dining operators who have historically considered the area too corporate and too lunchtime-dependent to justify the operational model. If Padella's Borough Market playbook translates to Bishopsgate, it may accelerate a broader move by quality independent operators into the City's underserved lunchtime segment.
